Nantahala Brewing is located on Depot Street across from the Great Smoky Mountain Railroad in Bryson city. They craft beers such as the Noon Day IPA, an inagural beer made with pale male and a generous amount of crystal malts, and the famous Bryson City Brown, a mild, easy drinking session beer with a complex chocolate and nutty flavor.


Cédric: I went to the Institute Meurice in Brussels. At the time, it was one of three universities in Belgium where you could learn to become a brewer. I always knew I wanted to work in a brewery. After school, I worked around Europe. I worked with Les 3 Brasseurs in France, and then the company moved me to Montreal where I managed a chain of brewpubs. I looked after the expansion as the company opened up a number of locations in downtown Montreal, one in the suburbs, and then one in Toronto. I supervised the expansion of the brewpubs, managing the construction, the hiring and management of staff, running the labs, and more. I met Chloe after living in Montreal for one year.


Cédric: Our team. The people that we work with. It was so hard to lay off 11 staff in March. That was super hard to do. But after the shutdown, everyone came back. It showed us that our team members believe this is more than a job for them. This is where they belong.


Hot diggity dang, y'all! Nine Mile is One Year Old today! As part of the celebration we made a doozy of a boozy ale for your eager palates... an Imperial Brown Ale w/ Toasted Coconut & Toasted Almonds. Think of an Almond Joy bar in liquid form... its full-flavored, with lovely layers! Built upon a mixed base of Maris Otter from across the pond, as well as local MN Pilsner malt from our pals over at Maltwerks, with a veritable host of specialty grains to lend layer to this robust malt backbone. Varied crystal malts interplay with some pale chocolate, brown malt, dextrin, golden naked oats, a smidge of Munich, and a bit o' of white wheat. Buckwheat honey from our buds at Bare Honey provides a boost of body & booze and gives off a wisp of earthy nuttiness . Lotus hops provide enough balance to counter the mild-to-moderate sweetness. And a beast of an English Ale yeast strain rounds everything out superbly.We also conditioned this big, bold ale on heaps of toasted coconut & a grip of toasted almonds. They each toss off loads of aromatics & flavor without being overpowering and obscuring the malt-forward presence of the whole.Large & in charge. Beguiling & sneakily smooth. Malty, toasty, nutty... bits o' baker's chocolate & light notes of toffee... and dessert-leaning tones ribboning throughout... this is a sipper worthy of a birthday party!!Come on down, imbibe some of this gem, & party with us today! We dug back into a bit of the past for this one, y'all. Also known as a "Pennsylvania Porter", "Philadelphia Porter", & "East Coast Porter" this historical style has got a lil' bit of roast, a bit of toast, a smidge of sweetness, yet finishes fairly dry. Built on a mixed base of 2-row pale & 6-row malts with a varied supporting cast including: flaked corn, rye, red rye crystal, pale chocolate, & a touch of double roasted crystal. Lotus hops provide enough balance to cut through the subtle sweetness. Speaking of... we added a decent drop of molasses to augment the body, lightly boost the ABV, & have it give off wisps of depth. A nicely attenuative English Ale strain rounds it all out nicely. These Pre-Prohibition styles in general utilized whatever grains they had on hand from their own farms, of those of the surrounding area. Molasses was also a common adjunct to add as well. These particular porters were popularly brewed & consumed during Colonial America & around the Revolutionary War... hence their nicknames/monikers.Come on down and getcha some of this not very often brewed style of dark ale!Cheers!
